OK so I promised to provide you with cheesecake recipes on the regular, so the recipe for this week will be one of my favorite cheesecakes. Try it out and let me know what you think!

Ingredients for 8 servings
For the biscuit base
- 8-10 digestive biscuits (full grain or regular)
- 50 g butter
For the filling
- 100 g white chocolate
- 4 tbsp whipping cream
- 400 g fat free cream cheese
- 1 egg
- 4 tbsp sweetener
- 1 teaspoon grated orange peel
- Some frozen berries to to top the whole thing with.
Method
- Preheat the oven to 150 degrees Celsius (=302 degrees Fahrenheit). Prepare the base and filling in the meantime.
- Mix the biscuits and butter in a food processor (or melt the butter and crush the biscuits and mix manually if you don’t have one). Press onto the base of a 23cm springform tin. Put in the refrigerator while you prepare the filling.
- Put the whipping cream and half of the chocolate in a saucepan and warm gently until the chocolate has melted. Allow to cool some
- Using an electric mixer – mix the cream cheese, egg, grated orange peel and sweetener. Add the white chocolate batter.
- Distribute the filling evenly over the bottom, put some berries on top and put it in the oven for 30-45 minutes. It will be completely baked outermost and partially liquid in the middle when it’s done. Allow the cake to cool slowly.
- Put the cake in the fridge for 2-3 hours.
- Melt the rest of the white chocolate and drip over the cake

Looks awesome! I’ve been using this recipe (http://allrecipes.com/Recipe/omas-cottage-cheesecake/detail.aspx) for my cheesecake extravaganza for a while but i’d like you to try yours.
Just one question, what kind of sweetener do you use?
Yeah try it out and let me know what you think, I’ve had nothing but awesome response so far! I just use one aspartame-based that I buy in my local store… Nothing fancy
The cheescake turned out great, thanks again
